Sweet Grain Chicken Bowl


For anyone who read my post about why you should eat white rice, I mentioned that one of my FAVORITE ways to get in a nutrient dense meal while spiking insulin levels was this sweet grain bowl.

It’s so easy to make, smells delicious, and tastes even better. Trust me, the combination sounds weird but is so, so, good.

post agave syrup…pre cinnamon

This can easily be served without the chicken to be made vegan, doubled/tripled, or you can serve it atop greens on a salad!

  • 1/2 cup diced sweet potato (100g)
  • 4 oz chicken breast
  • 1 tbsp raisins (14g)
  • 1/2 cup brown rice, cooked (100g)
  • 1 tsp agave nectar (4g)

While brown rice is cooking, dice sweet potato. Wrap in damp paper towel and microwave ~2.5 mins. Spray a pan with PAM and cook the chicken breast. Combine all ingredients into a  bowl, sprinkle with cinnamon, and drizzle agave.

*I like to also add half a packet of stevia to make it extra sweet.

    Looks absolutely delicious. I’ll bet as hard as you exercise your nutrition plays a vital role in how you feel and how you look. You are very fortunate to have developed a passion and knowledge at such a young age. It will likely help you achieve the quality of life you seek for many many years.
