Quick and Healthy Turkey Chili

{Low Fat, High Protein, High Fiber}

Ok I was SO proud of myself for making this chili recipe. I took a bunch of leftovers (yet again) and recreated it into a delicious dinner in less than 15 minutes. My leftovers included: opened bags of frozen carrots & corn, and an opened can of black beans. I added a can of tomatoes and voila!
I couldn’t believe how quick and easy this was! Literally throw this in a pot when you get home from work, go change into some comfy clothes and it’ll be done when you’re back. I’m going to post below the recipe for one serving, but feel free to double up on the ingredients etc.

  • 4 oz. 99% Extra Lean Ground Turkey
  • 1/2 cup Low Sodium Black Beans
  • 1/4 Onions (Diced)
  • 1/2 cup No Salt Added Diced Tomatoes
  • 1/4 cup Corn
  • 1/4 cup Carrots
  • 1/2 tsp Chili Powder
  • 1 Clove Garlic, Chopped
  • Dash of Cumin, Cayenne pepper, Stevia
  • Salt (to taste)

Topping ideas:

  • Romaine Lettuce
  • Greek Yogurt
  • Cheese
  • Hot Sauce

Spray a sauce pan with PAM and saute onions, garlic, and turkey. Once they have browned a little, add the spices and rest of ingredients. Add a dash of water and bring to boil. Reduce heat to a simmer and let cook for 10 mins. Remember to taste the spices after 5 mins and adjust them accordingly!

Macros: 300 cals (2g F, 31g C, 37g P) w/ 10g of fiber !
