Dinner in 5: Chicken and Sweet Potatoes with Broccoli

You’re in a rush and you don’t have time to make to make dinner. Well, you’re in luck because one of my favorite meals is made in less than 5 mins with NO prep, and I’ll tell you how.

Sweet Potatoes, chicken and broccoli is your typical bodybuilder’s “bro” meal. Well, technically chicken and rice is but that’s for another blog post. Ok so! Let’s get to how to make this in 5 mins.

  • 4 oz Chicken Breast
  • 100g Sweet Potato
  • 100g Broccoli
  • chopped onion (optional)

Grab the chicken from the freezer and throw it in the microwave to defrost for a couple mins. Meanwhile peel, measure, and chop the sweet potato and broccoli. It should be about 1/3-1/2 of a large potato and two handfuls of broccoli. Wrap the chopped potatoes in a damp paper towel and remove the chicken from the microwave. Microwave the sweet potatoes for about 3-5 mins depending on the chunk size, and add in the broccoli for the last minute or so. While that is in the microwave, spray a pan with pam and add the chopped onion and diced chicken. Throw the sweet potatoes, broccoli, and seasoning of your choice into the skillet.

Voila! Multi-tasking to make dinner in 5! I serve mine with a tbsp of organic ketchup.

Here are the macros using the sizes I described and no ketchup: 5gF/27C/41P *w/6g of fiber!

PS I like to save my carbs and fat for dessert for dinner (I have a sweet tooth ok?), but feel free to add more sweet potato, cook the potatoes in oil, or add some avocado/guacamole to up those macros!
